1️⃣ Brown the pork chops

Season pork chops with salt, pepper, and paprika.

Heat oil in a large skillet over medium heat.

Sear pork chops for 3–4 minutes per side until golden brown.

Remove and set aside.
2️⃣ Make the gravy base

In the same skillet, add sliced onion and cook until soft.

Add garlic and cook for 30 seconds.

Sprinkle in flour and stir well for about 1 minute.
3️⃣ Prepare the gravy

Slowly pour in broth while stirring to avoid lumps.

Add thyme and heavy cream if using.

Simmer until the gravy thickens.
4️⃣ Final cooking

Add sliced potatoes to the gravy.

Place pork chops on top.

Cover and simmer on low heat for 25–30 minutes, until potatoes are tender and pork chops are juicy.
