Preheat oven to 200°C (400°F).

Sauté mushrooms
Heat oil or butter in a pan, add onion (if using) and mushrooms.
Cook until moisture evaporates. Season with salt, pepper, and herbs. Let cool. -
Prepare pastry
Roll out puff pastry on a lightly floured surface. -
Fill
Spread mushrooms evenly over the pastry, leaving a 2 cm border.
Add ham, then sprinkle cheese on top. -
Roll
Roll tightly into a log. Seal the edge with a little beaten egg. -
Egg wash
Place seam-side down on a baking tray lined with parchment paper.
Brush with beaten egg. -
Bake
Bake for 25–30 minutes, until golden and puffed. -
Rest & slice
Let rest 5 minutes before slicing.

Let the mushroom mixture cool to avoid soggy pastry.

For extra flavor, add a spoon of cream cheese or mustard before rolling.

Sprinkle sesame or poppy seeds on top before baking.
