  • 10 g instant yeast

  • 70 g sugar

  • 1 tsp salt

  • 240 ml warm milk

  • 1 egg (room temperature)

  • 60 g unsalted butter, very soft

  • 1 egg yolk + 1 tbsp milk (for brushing)
